Traditional Chicken Kyiv

Ingredients

  • 4 Chicken breast fillets
  • 150g softened butter
  • 2 garlic cloves, crushed
  • 1 – 2 Tbsp chopped fresh parsley
  • 1 cup breadcrumbs
  • 1/2 cup plain flour
  • 2 eggs
  • Oil for frying

Method

Combine butter, garlic and parsley in a small bowl and mash with fork to incorporate. Add salt and pepper to taste. Scrape butter mixture onto a 30cm square of cling wrap. Roll up into a 10cm long sausage and twist ends to seal. Refrigerate for 1 hour or freeze for 30 mins.

Make a cut into the side of each chicken breast to form a cavity. Be careful not to cut all the way through. Unwrap garlic butter from cling wrap and cut into 8 thick slices. Place 2 in each chicken breast cavity. Secure with a toothpick.

Whisk eggs in a shallow bowl. Place flour on a plate and breadcrumbs on another plate. Coat chicken breasts in flour, then dip in egg, then dip in breadcrumbs. Coat thoroughly.

Preheat oven to 180C. Fry Chicken Kyivs in a small amount of oil in a heavy frying pan for 2 -3 minutes each side. Place on greased baking tray and bake in oven for about 20 minutes or until cooked through.

Serve with a green salad or steamed veggies and mashed potato.
